Nobu Matsuhisa opens his third Las Vegas restaurant at Paris Las Vegas in early 2022

The Japanese chef plans to open his newest location at Paris
Las Vegas just can’t get enough of the Nobu Matsuhisa and his fusion cuisine that melds traditional Japanese dishes with Peruvian ingredients. While the chef already has Nobu at Caesars Palace, attached to his very first hotel that opened in 2013, and Nobu at Virgin Hotels, he now plans to open a third location in early 2022 at Paris Las Vegas. The restaurant takes over the former Sekushi space on Le Boulevard next to Café Americano and across from the hotel elevators.
Matsuhisa opened his first eponymous restaurant in Los Angeles in 1987, and met actor Robert De Niro while he dined. The pair became friends, and by 1994, Matsuhisa teamed up with De Niro, restaurateur Drew Nieporent, and investor Meir Teper to open Nobu restaurants, with the first debuting in TriBeCa in New York City. Now the brand spans 17 locations in the United States and 30 more international outposts.
Matsuhisa’s indelible mark on the culinary world includes his signature dishes such as miso-marinated black cod, rock shrimp tempura, yellowtail sashimi with jalapeño, and king crab tempura, many of which can be found on any high-end Japanese menu now.
Nobu opened its first Las Vegas location at the Hard Rock Hotel in 1995 when the resort debuted on the east side of the Strip. In 2020, the hotel closed to renovate into Virgin Hotels, but the restaurant returned with a remodel and its collection of Japanese whiskeys when the resort debuted last March. During the interim, Matsuhisa wanted to keep his staff employed and opened a temporary location at Bally’s Las Vegas, but that closed in March 2020 when the state shut down nonessential businesses to slow the spread of COVID-19.
In 2013, the Nobu team debuted its first hotel, complete with the largest Nobu in the world at the base. It marked the first time Nobu offered teppanyaki tables. Upstairs at the hotel, customers can order room service from a Nobu-curated menu that includes his rendition of a burger.
The renovations for Nobu don’t end with a new location in Las Vegas. Nobu Hotel at Caesars Palace plans to undergo a multimillion-dollar refresh of its 182 guest rooms and public areas, set to be complete by the end of 2021.
The refreshes at Paris include Vanderpump à Paris from Lisa Vanderpump of Vanderpump Rules and Real Housewives of Beverly Hills fame. The new lounge is a follow up to Vanderpump Cocktail Garden at Caesars Palace with whimsical cocktails, and a lush Parisian-inspired decor from Nick Alain. Vanderpump à Paris will be located next to the Paris Las Vegas front desk.
