New chef, menu for Dukes Chophouse at Rivers Casino

The new head chef at Dukes Chophouse at Rivers Casino in Schenectady, Juan Morales, comes to the area from Las Vegas, where for five years he supervised five restaurants, catering and in-room dining for the Green Valley Ranch Resort and Casino. Morales took over at Dukes in the spring.

New items on the menu at Dukesinclude mushroom-mozzarella arancini, beef carpaccio, crab cakes, cherrywood-smoked bacon steak, antipasto chopped salad, seafood tower, 22-ounce ribeye, diver scallops with risotto and crab-stuffed sole.

Dukes serves dinner from 4 to 10 p.m. Sunday to Thursday, 4 to 11 p.m. Friday and Saturday; its bar is open for beverage service from 11 a.m. to midnight daily. Call 518-579-8800. The casino is at 1 Rush St., in the Mohawk Harbor complex.
